  • ¼ cup cold salted butter (cubed, 56g)
  • 4½ cups all-purpose flour (540g)
  • 1 tablespoon plus 3 teaspoons baking powder
  • 2 teaspoons salt
  • ⅔ cup salted butter (152g)
  • ⅔ cup sour cream (160g)
  • 2 tablespoons grated orange zest (about 3 large oranges)
  • 3 cups granulated sugar (600g) for frosting
  • 6 large eggs for frosting
  • 2 cups fresh orange juice (strained, 480ml) for frosting
  • ⅔ cup water (160ml) for frosting
  • 8 large egg whites for frosting
  • ¼ teaspoon kosher salt for frosting
  • 4 cups unsalted butter (softened and cut into 1-inch pieces, 908g) for frosting
  • 2 teaspoons pure vanilla extract for frosting
  • 4 to 6 drops orange food coloring (optional) for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the dry ingredients: sugar, flour, cornstarch, baking powder, and salt.
  3. In another bowl, mix wet ingredients: orange juice, egg yolks, butter, sour cream, and orange zest until smooth.
  4. Combine the wet and dry ingredients until just mixed.
  5. Divide the batter between the prepared pans and bake for 25–30 minutes until a toothpick comes out clean.
  6. Cool in pans for 10 minutes before transferring to racks to cool completely.
  7. For frosting, beat butter until creamy; gradually incorporate powdered sugar and egg whites until fluffy. Add vanilla extract and optional food coloring if desired.
  8. Assemble by layering the cooled cakes with frosting in between and covering the entire cake with frosting.
