Ingredients
- 1 salmon fillet (about 150g)
- 1 large egg
- 1 cup fresh spinach leaves
- 1 cup sliced mushrooms
- Avocado, diced
- 1 tbsp olive oil (divided)
- Salt & freshly cracked black pepper to taste
- 1 small garlic clove, minced (optional)
Instructions
- Heat ½ tbsp olive oil in a skillet over medium heat. Season the salmon with salt and pepper; cook skin-side down for 3-4 minutes, then flip and cook another 2-3 minutes until just cooked through.
- In a separate small pan over low heat, drizzle olive oil and gently crack in the egg. Cook sunny-side up until the whites are set.
- In the same skillet as the salmon, add sliced mushrooms and sauté until golden brown; add minced garlic if desired.
- Quickly add spinach to the skillet with mushrooms and sauté until wilted but vibrant green.
