  • 4 tablespoons cold unsalted butter (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare muffin pan.

  3. In another bowl, whisk together milk, egg, oil, and vanilla extract.
  4. Combine wet and dry mixtures until just combined; fold in 3/4 cup peaches.
  5. Prepare topping by mixing reserved peaches with flour, sugar, baking powder, cinnamon, and butter until crumbly.
