Ingredients
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup crushed pineapple, drained (reserve juice for glaze)
- 1/2 cup sour cream (room temperature)
- 1 1/2 cups powdered sugar
- 2–3 tbsp reserved pineapple juice
Instructions
- Preheat your oven to 325F (165C). Grease and flour a Bundt or tube pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually mix this into the butter mixture alternately with sour cream.
- Gently fold in the drained crushed pineapple.
- Pour the batter into the prepared pan and bake for 75-85 minutes or until a toothpick comes out clean. Cool in the pan for 15 minutes before transferring to a wire rack.
- For the glaze, whisk together powdered sugar and reserved pineapple juice until smooth; adjust consistency as needed.
- Once cooled, drizzle glaze over the cake and let it set before serving.
