  • 3/4 cups water
  • 1/2 cup liquid glucose/light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (fresh, unwaxed)

Instructions

  1. Prepare a baking sheet by greasing parchment paper and setting it aside.
  2. Insert bamboo skewers into each apple for easy handling.
  3. In a saucepan over medium heat, combine sugar, water, liquid glucose, and black gel food coloring. Stir until the sugar dissolves.
  4. Bring the mixture to a simmer without stirring. Wash down the sides of the pan with a wet brush to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF), using a candy thermometer for accuracy.
  6. Dip each apple into the caramel mixture, ensuring an even coating.
  7. Place the dipped apples on the prepared baking sheet and allow them to cool and harden before serving.
