Ingredients

  • 1 cup quinoa
  • 100g chicken breast, diced
  • 2 soft-boiled eggs
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes
  • 2 tbsp feta cheese, crumbled
  • 1 tsp olive oil
  • Salt & freshly cracked black pepper

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions until fluffy.
  2. Season diced chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 5–6 minutes until golden brown and cooked through.
  3. Bring water to a boil in a pot. Gently add eggs and cook for 7 minutes for jammy yolks. Cool under cold water, peel, and slice in half.
  4. Set up a steamer basket over boiling water and steam broccoli florets for 3–4 minutes until tender but bright green.
  5. Assemble the bowl by placing cooked quinoa at the base, topping it with chicken, eggs, steamed broccoli, cherry tomatoes, crumbled feta cheese, and seasoning to taste.
