Ingredients
- 15 whole rectangular graham crackers
- 8 tablespoons unsalted butter (melted)
- 1–1/4 cups pumpkin puree
- Three 8-oz packages full-fat cream cheese (at room temperature)
- 3 large eggs (at room temperature)
- 1–2/3 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1–1/2 teaspoons pumpkin pie spice
- 1/2 cup full-fat sour cream
Instructions
- Preheat your oven to 350°F and line a 9×13 inch baking pan with foil, greasing it lightly.
- For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of the pan and bake for 10 minutes until golden brown.
- In another bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, and salt while mixing. Incorporate eggs one at a time, then fold in pumpkin puree, flour, pumpkin pie spice, and cinnamon.
