  • 15 whole rectangular graham crackers
  • 8 tablespoons unsalted butter (melted)
  • 11/4 cups pumpkin puree
  • Three 8-oz packages full-fat cream cheese (at room temperature)
  • 3 large eggs (at room temperature)
  • 12/3 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 11/2 teaspoons pumpkin pie spice
  • 1/2 cup full-fat sour cream

Instructions

  1. Preheat your oven to 350°F and line a 9×13 inch baking pan with foil, greasing it lightly.
  2. For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of the pan and bake for 10 minutes until golden brown.
  3. In another bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, and salt while mixing. Incorporate eggs one at a time, then fold in pumpkin puree, flour, pumpkin pie spice, and cinnamon.
  4. Pour half of the filling over the crust; dollop remaining batter on top and swirl gently with a knife. Bake for about 50 minutes until set in the center.
