- 1/2 cup packed light brown sugar
- 1 1/4 cups canned pumpkin puree
- 1 large egg (room temperature)
- 1 teaspoon pure vanilla extract
- 8 ounces block-style cream cheese (softened but still cool)
- 1/4 cup unsalted butter (softened but still cool)
- 1 teaspoon pure vanilla extract
- 1 3/4 cups confectioners’ sugar (sifted)
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, beat together room temperature unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add in canned pumpkin puree, egg, and vanilla extract; mix until well combined.
- Carefully add the dry ingredients to the wet mixture and mix just until combined. The dough will be slightly sticky and soft.
- Using a cookie scoop or spoon, scoop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 13-15 minutes until the edges are set while keeping the centers soft and fluffy. Allow them to cool on the pan for a few minutes before transferring them to a wire rack to cool completely.
- In a clean mixing bowl, beat together softened cream cheese and unsalted butter on medium-high speed until smooth. Add in vanilla extract and sifted confectioners' sugar, mixing until well combined.
- Once cookies have cooled, frost each cookie with cream cheese frosting and garnish with a sprinkle of cinnamon if desired.
