Instructions

  1. Preheat your oven to 375°F and line muffin pans with paper liners.
  2. In a large bowl, whisk together oil, sugar, and vanilla. Add pumpkin puree, eggs, and milk; mix until smooth.
  3. In another bowl, combine flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually add dry ingredients to wet ingredients; mix until just combined.
  4. For the cream cheese filling: beat cream cheese and sugar until smooth; add egg and vanilla extract.
  5. Fill muffin cups about two-thirds full with batter. Spoon cream cheese filling on top and gently swirl with a knife.
  6. Bake for 15-18 minutes or until a toothpick comes out clean.
