  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out seeds, or place ramekins in a baking dish.
  3. In a mixing bowl, whisk egg yolks and sugar until pale.
  4. Heat heavy cream in a saucepan until simmering, then gradually add to the egg mixture while whisking.
  5. Stir in pumpkin puree, vanilla extract, cinnamon, ginger, and salt until combined.
  6. Pour the custard mixture into prepared vessels about three-quarters full.
  7. Place filled ramekins in a larger baking dish and add hot water halfway up their sides.
  8. Bake for approximately 30 minutes until edges are set; cool before refrigerating for at least two hours.
  9. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
