  • 1 cup whipping cream
  • 15 ounces pumpkin puree
  • ¾ cup powdered sugar
  • 2 tablespoons brown sugar
  • Pumpkin pie spice

Instructions

  1. For the crust, combine graham cracker crumbs, chopped pecans, sugar, pumpkin pie spice, and melted butter in a bowl. Press firmly into a 9×13 inch baking dish.
  2. In another bowl, beat cream cheese with powdered sugar and vanilla until smooth. Whip chilled cream until stiff peaks form and fold into the cream cheese mixture.
  3. Mix pumpkin puree with brown sugar and pumpkin pie spice; then fold this into half of the cream cheese mixture.
  4. Layer half of the cream cheese filling over the crust, followed by the pumpkin layer, and top with remaining cream cheese filling.
  5. Chill for at least one hour before serving. Top with Cool Whip and chopped pecans if desired.
