  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 12 slices Texas toast (or French bread)
  • 1/2 cup butter (room temperature)
  • 3 tbsp maple syrup (or honey)
  • 1/2 tsp cinnamon for whipped butter
  • 1/2 tsp pumpkin pie spice for whipped butter

Instructions

  1. Heat a large non-stick skillet over medium heat and melt a small amount of butter.
  2. In a baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until well combined.
  3. Dip each slice of bread into the mixture, making sure both sides are coated.
  4. Cook each slice in the skillet for about 2-3 minutes on each side until golden brown.
  5. For the whipped pumpkin butter, beat butter until fluffy; mix in pumpkin puree, maple syrup or honey, and spices.
