  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing or lining it with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Add melted butter and mix until crumbly.
  3. Press half of the crumble mixture into the prepared dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle remaining crumble mixture on top and add walnuts if desired.
  7. Bake for 30–35 minutes until golden brown and filling is set.
  8. Allow to cool completely before slicing into squares.
