Ingredients
- 2 large eggs
- 1 handful fresh spinach
- 45 sliced mushrooms (button or cremini)
- 1 small tomato, halved
- 1 slice sourdough or whole-grain bread
- 1 tsp olive oil or butter
- Salt & pepper to taste
- Fresh parsley (optional)
Instructions
- In a skillet over medium heat, add olive oil and sauté sliced mushrooms for 5–7 minutes until golden. Season with salt and pepper.
- Add fresh spinach to the skillet and wilt for 1–2 minutes. Season lightly.
- Cut the tomato in half; roast at 400°F for 10 minutes or pan-sear cut side down until charred.
- Toast the bread until golden brown.
- Fry eggs sunny-side-up or over-easy in a non-stick skillet until whites are set and yolks are runny.
- Assemble by layering toast with mushrooms, eggs, spinach, roasted tomato, and fanned avocado. Garnish with parsley if desired.
