  • 10 oz cremini mushrooms
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese
  • 1/2 cup Gruyère cheese
  • 2 tablespoons unsalted butter
  • 2 large eggs
  • Fresh thyme leaves

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large skillet, heat olive oil and butter over medium heat. Sauté diced onion until soft, then add garlic and mushrooms until browned.
  3. Stir in thyme, salt, pepper, and apple vinegar (if using), cooking until liquid evaporates. Reduce heat and mix in cream cheese, Parmesan, and Dijon mustard (if using).
  4. Unroll the puff pastry; cut diagonal strips along both sides while leaving the center intact. Spread the filling down the middle.
  5. Fold ends over filling and braid the strips over it carefully.
  6. Brush with beaten egg and bake for 20–22 minutes or until golden brown.
