Ingredients
- 1 ½ lbs boneless, skinless chicken thighs or breasts
- 4 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp all-purpose flour (optional, for thickening)
- 1 cup frozen peas (added at the end)
Instructions
- Cut chicken into chunks and slice all vegetables.
- Place chicken, carrots, potatoes, celery, onion, and garlic into the slow cooker.
- Add thyme, rosemary, bay leaf, salt, pepper, tomato paste, and chicken broth; stir well.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until tender.
- For thicker stew (optional), whisk flour with water and stir in during the last 30 minutes.
- Add frozen peas in the last 15 minutes of cooking.
