  • 3 tbsp honey
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp ground black pepper
  • 2 tsp sea salt

Instructions

  2. Pat the lamb shoulder dry and combine garlic, mustards, honey, herbs, salt, and pepper in a bowl. Rub mixture over the lamb.
  3. Place lamb in a roasting pan and roast for 4-5 hours until internal temperature reaches 195°F (90°C), basting every hour.
