  • 50g Granulated Sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs
  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter
  • 225g Cream Cheese
  • 250g Powdered Sugar
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. Warm milk until lukewarm; mix with sugar and yeast. Let sit until frothy.
  2. In a bowl, combine eggs, salt, and flour. Add yeast mixture and softened butter; mix to form a dough.
  3. Knead on a floured surface for 5-7 minutes; let rise in a greased bowl until doubled (about 1 hour).
  4. Prepare apple filling by cooking diced apples with butter, sugar, cinnamon, and cornstarch until tender.
  5. Roll out dough into a rectangle; spread with butter, sprinkle brown sugar and cinnamon mixture, add apple filling and pecans.
  6. Roll tightly into a log, slice into 12 pieces, place in a greased dish, cover to rise for another hour.
  7. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
  8. For frosting: blend softened butter and cream cheese; gradually mix in powdered sugar and cream.
