- 2 pounds yellow squash, sliced
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup crushed buttery crackers
- 1/2 cup milk
- 2 large eggs
- 1/4 cup butter, melted
- Salt and spices (black pepper, garlic powder, onion powder, paprika)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- Boil sliced squash and chopped onion in a large pot for about 5 minutes until tender. Drain and let cool.
- In a mixing bowl, combine cooked squash, onion, cheddar cheese, crushed crackers, milk, eggs, melted butter, salt, and spices. Mix well.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes until golden brown on top.
