  • 2 pounds yellow squash, sliced
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup butter, melted
  • Salt and spices (black pepper, garlic powder, onion powder, paprika)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. Boil sliced squash and chopped onion in a large pot for about 5 minutes until tender. Drain and let cool.
  3. In a mixing bowl, combine cooked squash, onion, cheddar cheese, crushed crackers, milk, eggs, melted butter, salt, and spices. Mix well.
  4. Pour the mixture into the prepared baking dish and spread evenly.
