  • 1 ½ pounds red mini creamer potatoes
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon black pepper
  • Parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash the potatoes under cold water and dry slightly.
  4. In a bowl, mix cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato using a paring knife, then place them in the lemon water.
  5. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  6. Drain the carved potatoes and toss them in the seasoning mixture until evenly coated.
  7. Place the coated potatoes face-up on the baking sheet and bake for approximately 30 minutes or until golden brown and tender.
  8. Garnish with parsley flakes before serving.
