  • cup chopped dates
  • cup homogenized milk
  • teaspoon baking soda
  • tablespoons butter
  • cup dark brown sugar
  • eggs, room temperature
  • teaspoons pure vanilla extract
  • cups unbleached all-purpose flour
  • teaspoons baking powder
  • teaspoon kosher salt
  • cup butter for caramel sauce
  • cups brown sugar for caramel sauce
  • cup cream for caramel sauce
  • teaspoon kosher salt for caramel sauce
  • whipped cream for serving

Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch casserole dish.
  2. Soak chopped dates in milk and baking soda for 15 minutes.
  3. In one bowl, combine flour, baking powder, and salt. In another bowl, beat eggs until fluffy.
  4. Blend eggs, dark brown sugar, butter, and vanilla in a food processor; gradually add dry ingredients.
  5. Mix in the soaked dates along with any remaining liquid until smooth.
  6. Pour batter into the prepared dish and bake for 30 minutes until golden.
  7. Prepare the caramel sauce by melting butter, adding brown sugar and cream until thickened.
  8. Poke holes in the baked pudding, pour over some caramel sauce, and let it soak before serving warm.
