Ingredients
- 4 large Portobello mushrooms
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup chopped spinach
- ½ cup diced cherry tomatoes
- ¼ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking sheet.
- Brush the mushrooms with olive oil and place them gill-side up on the baking sheet. Season with salt and pepper.
- In a pan, sauté minced garlic in 1 tablespoon of olive oil for one minute. Add spinach until wilted, then mix in cherry tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
- Spoon the filling into each mushroom cap and top with mozzarella cheese.
- Bake for 15–18 minutes until the mushrooms are tender and the cheese is melted.
