  • 4 large Portobello mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup chopped spinach
  • ½ cup diced cherry tomatoes
  • ¼ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Brush the mushrooms with olive oil and place them gill-side up on the baking sheet. Season with salt and pepper.
  3. In a pan, sauté minced garlic in 1 tablespoon of olive oil for one minute. Add spinach until wilted, then mix in cherry tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Spoon the filling into each mushroom cap and top with mozzarella cheese.
  5. Bake for 15–18 minutes until the mushrooms are tender and the cheese is melted.
