  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp red curry paste
  • 1 small yellow onion, diced
  • 1 tbsp neutral oil (for frying)
  • 1 tbsp coconut milk or broth

Instructions

  1. In a large mixing bowl, combine ground chicken, panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, red curry paste, salt, and pepper. Mix until well combined.
  2. Shape the mixture into 1-inch meatballs and set them aside.
  3. Heat neutral oil in a skillet over medium heat and cook the meatballs for 5-7 minutes until they are golden brown on all sides. Remove from skillet and set aside.
  4. In the same skillet, sauté diced onion until translucent. Add minced garlic and red curry paste; cook for another minute until fragrant.
  5. Return the meatballs to the skillet and pour in coconut milk or broth to cover them. Simmer for 10 minutes to allow flavors to meld together.
