  • 2 medium zucchini
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Slice zucchini lengthwise and layer them at the bottom of the dish. Sprinkle with dried oregano.
  3. Spread half of the ricotta over the zucchini, followed by half of the marinara sauce. Repeat layering with remaining ingredients.
  4. Top with shredded mozzarella cheese.
  5. Cover with foil and bake for 25-30 minutes. Remove foil and bake an additional 10-15 minutes until golden and bubbly.
  6. Let cool briefly before garnishing with fresh basil and serving warm.
